My wonderful friend invited me over for a Pampered Chef party and I learned how to make their
Mexican Chicken Napolean so I decided to make it on my own at home
- (12) 6in - Corn Tortillas
- (2) Cups - Diced, Cooked, Unsalted Chicken Breasts
- (1) Can - Black Beans
- (1) - Medium Red Onion
- (1) Cup- Loosely Packed Cilantro
- (1) Cup - Shredded Monterey Jack Cheese
- (1/4) Cup - Light Mayonaise
- (2) Garlic Gloves
- (1/4) tsp - Salt and Ground Black Pepper (each)
- (3) Kiwi (peeled)
- (1) - Jalapeno Pepper (steamed and seeded)
- (1-2) Limes
- (2) Cups - Diced Pineapple
