Mexican Chicken Napolean

My wonderful friend invited me over for a Pampered Chef party and I learned how to make their Mexican Chicken Napolean so I decided to make it on my own at home
  • (12) 6in - Corn Tortillas 
  • (2) Cups - Diced, Cooked, Unsalted Chicken Breasts
  • (1) Can - Black Beans
  • (1) - Medium Red Onion
  • (1) Cup- Loosely Packed Cilantro
  • (1) Cup - Shredded Monterey Jack Cheese
  • (1/4) Cup - Light Mayonaise
  • (2) Garlic Gloves
  • (1/4) tsp - Salt and Ground Black Pepper (each)
  • (3) Kiwi (peeled)
  • (1) - Jalapeno Pepper (steamed and seeded)
  • (1-2) Limes
  • (2) Cups - Diced Pineapple
